CONTROLLED AND SUSTAINABLE RAW MATERIAL FOR THE PRODUCTION OF THE BEST GELATIN

Gelatin produced in Gerede Gelatin is obtained from cattle skins grown in Turkey, after all veterinary controls. One of the important sources from which natural collagen protein, of which awareness has been increased, can be obtained effectively, is the skin layer of the cowhide. After the pre-treatments carried out in our own structure, the skin layer is separated by “splitting & fleshing” operations and turned into a raw material called “splitting” in the sector jargon, and delivered to our facility from a very short distance without being exposed to any oxidation, deterioration, dust, sun etc. effects. It is possible. This is one of the only important factors for our production facility to produce top quality gelatin.

PRODUCTION
Preliminary
Before processing begins, all raw materials are reduced and washed with copious amounts of water, and then the main raw material preparation stage is reached.
Type B gelatin is produced in our facility with the method known as alkali preparation and process.
During the preliminary preparation stage, it is ensured that the natural collagen structure in the skin is softened and transformed by spending a long time in the alkaline environment with lime. This prepared structure can be extracted with water at temperatures that can be considered warm.

Extraction
Raw materials that pass the preliminary preparation stage are extracted traceably in multiple systems called extractors with warm water after certain controls.
The first gelatin extraction solution is lighter in color with relatively low temperatures, and the first solution usually has about 6-7% dry matter. The remaining raw material is continued until all gelatin is taken by applying a little more heat relatively. This situation continues with the continuous addition of raw materials and water in some different types of extraction processes. In such cases, the desired gelatin properties are adjusted with the temperature and Ph values ​​to be applied in these stages.

Purification and Filtration Stages
Impurities such as suspended solids and oil remaining in the solution after extraction are removed by centrifugation and/or filtration processes. At this point, very fine particles are taken with filters covered with kieselguhr, then cellulose sinter filters for liquid impurities and then salts are removed by ion-exchange filtration and membrane filtration methods.

Concentration
After this point, the gelatin solution is no longer storable and continues the processes of dewatering and sterilization so that it can be stored with a long shelf life. In order to do this, it passes the multi-stage evaporation systems, polishing cellulose filtration systems and sterilization modules, which also take into account the energy costs, and proceeds to the cooling stage.

Drying
The gelatin, which becomes sterile by reaching a certain concentration, is cooled at this point and entered into the drying system by being turned into a “noodle” pasta with its surface increased. At this stage, the temperature effect that has continued since the beginning of the process in the dryer with a very special design continues to be applied in a controlled manner, and the noodle pieces that are dried by reducing the moisture content below 10-12% pass the first breaking process and are packaged in a standard diameter and go from the storage area. Then, each batch that goes into production with traceability is approved to move to the mixing and packaging area after chemical, physical and bacteriological laboratory tests.
The air used during drying is specially conditioned by a special dehumidification and sterilization device, and the drying process is completed by using the drying air at suitable temperatures.

Crushing, Screening and Mixing processes
The dried gelatin, which has reached the final stage, and has a certain thickness, is brought to the desired bloom and mash size particle diameters in silo systems that can make special mixtures in line with the special needs of the customers, final laboratory controls are made, and then the shipment to the customer begins.
